Description
This is a used, restored Sakai Man-yoshi Kin-saku Tako-hiki knife. Rust and stains have been removed through electric polishing, resulting in polishing marks.

While the brand is not widely known today, this knife was part of the inventory of a prominent cutlery wholesaler in the Kansai region during the bubble economy era of the last century. As the company has long since gone out of business, this is dead stock.
As the name Kin-saku (謹作 - carefully made) suggests, the craftsmanship is quite meticulous. It appears that the forging and sharpening were outsourced to individuals who are now considered legendary figures in the industry.
Due to the established system of division of labor and outsourcing in Sakai knives from long ago, the specific blacksmith is no longer identifiable, but this is a blade that clearly demonstrates high technical skill.

When flicked with a fingernail, it produces a relatively high-pitched sound. It responds readily to sharpening, exhibiting the behavior of well-tempered White Paper Steel (Shirogami).
The sharpness delivered by the slender blade and thin edge is truly razor-like. It is optimized for cutting performance and is prone to chipping, so it is best not to cut hard materials with it.
The cutting edge is flat-ground, with a micro-bevel (ito-ba) applied to the very edge.

Maintenance has focused on restoring functionality (rust removal, warp correction, edge alignment). Please note that cosmetic polishing has not been performed.
Deep rust marks may remain as pitting, and there may be minor chips on the very edge. Therefore, those seeking a pristine item should refrain from purchasing.

The knife has been sharpened for use, but the final edge geometry and angle are up to the user. We request that only those who are capable of performing their own maintenance and adjustments make a purchase.

Blade length: approx. 27cm
Blade width: approx. 2.3cm
Steel thickness at heel: 3.2mm
Steel thickness at tip: 1.6mm
Weight: 92g
