This is a Sugimoto Chinese Cleaver No. 6.
It is said to be the pinnacle among Chinese cleavers.

I bought this at Kappabashi Kitchen Town 20 years ago when I aspired to be a chef.
I believe I purchased it for around 50,000 yen at the time.

Since I gave up on my culinary path without using it much, its use has been limited to a few sharpenings and test cuts.

As it was only sharpened 20 years ago, we recommend that the buyer sharpen it.

I have polished it slightly with cleanser for this listing, so there may be minor scratches. The rust on the blade edge is light and should disappear after sharpening.
Also, as it has been stored at home for 20 years, there may be unseen scratches, so we would appreciate your understanding of this. m(_ _)m
