Delicious when lightly blanched and dressed with a miso-vinegar sauce. Rich in iron and minerals, which are often lacking, it's perfect for preventing summer fatigue. They grow abundantly, but be aware that they wilt quickly and lose their flavor if not cooked immediately after harvesting. While delicious, they don't keep well, so we recommend cooking and consuming them within a day of harvesting. Plant them in a small planter and keep it by your house for a readily available vegetable!
