? Water Spinach
This vining vegetable originates from southern China and Southeast Asia. It is named Water Spinach because its stems are hollow like straws. Its season is from late June to around October, making it a valuable leafy green for summer.
Water spinach closely resembles the leaves and stems of sweet potatoes. Its leaves have a slimy texture, and its stems are crisp and crunchy. It has a mild flavor and can be used in various dishes such as stir-fries and blanched preparations. It is rich in nutrients like Vitamin C, iron, and potassium, and is expected to help combat summer fatigue and aid in recovery.

● Recommended ways to enjoy:
Stir-fries (stir-fried with bell peppers and oyster sauce, garlic, pork, etc.), boiled dishes (simmered with fried tofu, blanched water spinach), salads, steamed with tuna and ginger.

? Bok Choy germination temperature is 20-25°C, and growing temperature is 15-20°C. However, it is a hardy vegetable that tolerates both heat and cold, so temperatures from approximately 5-35°C are fine. It can be grown year-round in greenhouses, but for open-field cultivation, sow seeds from mid-March to mid-October. In midsummer, pests and diseases are abundant, making cultivation difficult, so spring and autumn sowing are recommended. Harvest time is about 40-60 days in high temperatures and 70-90 days in low temperatures.
Bok Choy is small and does not take up much space, making it suitable for container gardening on balconies.
